Sunday Brunch

Sunday was made for brunch. Doesn’t matter what I do, it just happens. Exercise with my bootcamp friends, go for a late morning run or go to church, my Sunday breakfast doesn’t happen before 12pm. 

It is not hard to find place for brunch but there are those weekends when you had a long busy week and you just don’t want to do anything or even going out. 

This was my case today. 11am and I was still in bed browsing my Instagram feed. suddenly I came across some breakfast pictures from accounts I follow and inspiration mixed with hunger kicked in. 

10 min later I was in the kitchen and the whole preparation didn’t take more then 15 min. of course I already had frozen burger patties. I find it very practical to prepare them in advance and freeze them, they unfroze themselves in the pan and cook very well. I also found in the fridge a pack with 3 gluten free waffles that were left there from previous weeks. and of course we had to prepare some king of bubbly drink. One little bottle of prosecco was enough for 2 drinks and instead of regular OJ we opted for apple juice. 

This was exactly what I prepared and it was enough for 2.

  • 2 home made burger patties
  • 2 fried eggs
  • 1 avocado
  • 1 Tomato
  • 1/4 lemon
  • 2 gluten free waffles (any brand)
  • 15 Blueberry
  • 1 banana
  • Honey

For the burger patties I used 1lb of ground meat, 1 small yellow onion, 2 garlic cloves, 1 egg, 3 pieces of old bread (any kind). Leave bread in water to soften. Peel onion and garlic and put in the food processor, squeeze the bread to get out a water and add it to the processor as well. blend it all together. Mix by hand  an egg, meat, salt and a mix of onions and bread. Form patties. I put them on a small cutting board then cover with a plastic wrap sheet and then lay another badge over them. after they all are stacked I freeze them. once you are ready to cook it is very easy to separate them. can be cooked any time and will last up to 4 month in the fridge. (might last more but I usually eat them before)

If you have this step ready, the rest of the preparation is very fast. While your patties are cooking cut a tomato and avocado. I didn’t mix them as salad but just laid over the plate and sprinkled with salt and lemon juice.

When patty is almost done I put waffles in the oven and broke 2 eggs on the pan. When breaking an egg try to make them apart so you don’t have to separate them later as they go over the patty.

I also served half of a banana and blueberry over the waffles. Sweetened it all with honey.

This is pretty healthy choice. My waffles were made from quinoa and all sugars were naturals coming from fruits and honey.

Besides being healthy it is a very affordable brunch that will not feel cheap.
